About the Recipe
This sweet potato and quinoa chili recipe is a great way to switch it up from your traditional chili. I've seen many variations of this recipe online, but they're typically vegetarian using beans instead of ground meat. Personally, I prefer to use ground turkey here, you could also use ground beef. This is a super easy crock pot chili recipe, just throw everything in the crock pot and let cook about 6-8 hours. I like to serve the chili topped with avocado and crushed tortilla chips for extra flavor and crunch. Enjoy!

Ingredients
2-3 sweet potatoes (diced)
1lb. ground turkeyÂ
1/2 cup quinoa
1 onion (diced)
1 red bell pepper (diced)
1 small zucchini (diced)
1 tomato (diced)
Garlic (minced)
14 oz. can roasted diced tomatoes
3 cups chicken stock (more if needed)Â
1 can tomato paste
1 1/2-2 tbsp. chili powder
2 tsp. Paprika
Salt & pepper
Avocado (for topping)
Tortilla chips (for topping)
Preparation
Start by browning your meat in a skillet. Drain and put in slow cooker.
Add diced veggies, roasted tomatoes, tomato paste, and seasonings. Stir all together.
Stir in chicken stock and a cup of water if needed.
Stir in quinoa.
Cook on low for 6-8 hours or until sweet potatoes are tender and quinoa is cooked. Stir on occasion.
Serve warm and top with diced avocado and crushed tortilla chips.
