Who doesn't love a quick, easy side salad? This 4-ingredient salad is fresh, super quick, and maybe something a little different. The rice vinegar adds a tangy bite, but the sugar helps sweeten it up in a good way. You can use different veggies, too. I like to add black olives. Whatever works for you! Eat as a snack on its own or use as a side salad with a meat or protein. Store leftovers in the fridge for a day or two. Overall, this probably classifies as something you can quickly put together when you have "nothing to eat". As long as you keep rice vinegar on hand. You can even throw the dressing over just 1 veggie instead of 2-3. Enjoy!

Ingredients

  • 1/3 cup rice vinegar

  • 2 tsp. sugar

  • 1 cucumber

  • 2 large carrots

  • Pepper

Preparation

  1. Cut up cucumber and carrots into desired shapes and sizes. Add to a bowl.

  2. In a smaller bowl, add rice vinegar & sugar. Whisk until sugar dissolves.

  3. Poor dressing onto the veggies and combine. Season with pepper and serve.
